Irish monks are said to have brought the practice of distillation to these shores as early as the 12th century, and from that first act of alchemy, the Gaelic world christened it “uisce beatha”, the water of life.
By the late 1800s, Irish whiskey had earned its reputation as the world's spirit of choice – celebrated for the quality of its grain, the mastery of its pot stills, and the unmistakable character that only this island could produce.
What followed was the near-extinction of the Irish whiskey. The perfect storm of historical, political, commercial forces harrowed Ireland's distilling tradition, from 88 working distilleries down to just 2 by the mid-1980s.
But extraordinary endures.

There are whiskey makers, and then there is Dr. Jack Ó'Sé. Jack has spent more than four decades immersed in the science, the craft and culture of Irish whiskey. He began making alcohol in 1979 and has never stopped learning, never stopped pushing.
Jack is one of Ireland's most respected figures in the world of spirits: distiller, industry mentor, teacher and endlessly curious explorer of flavour. He has distilled award-winning whiskeys, commissioned distilleries across continents, and worked alongside the finest maturation experts, blenders, and coopers in the world. He has gathered craft knowledge and creative influence from every corner of the globe — and brought it together to pour into every Sailor's Home expression.
