MAKING LEGENDARY
Behind every Sailor's Home expression is a singular making philosophy. Great whiskey is never an accident – it’s the outcome of craft inherited, knowledge accumulated, and a relentless, restless pursuit of taste above all.
WELCOME TO IRELAND -
HERE WE MAKE GREAT WHISKEY
A place renowned for craft, creativity, story-telling, making and artistry. And famously not lovers of rules.
Irish monks are said to have brought the practice of distillation to these shores as early as the 12th century, and from that first act of alchemy, the Gaelic world christened it “uisce beatha”, the water of life.
By the late 1800s, Irish whiskey had earned its reputation as the world's spirit of choice – celebrated for the quality of its grain, the mastery of its pot stills, and the unmistakable character that only this island could produce.
What followed was the near-extinction of the Irish whiskey. The perfect storm of historical, political, commercial forces harrowed Ireland's distilling tradition, from 88 working distilleries down to just 2 by the mid-1980s.
extraordinary endures
Irish whiskey has been in renaissance since then and to today — reclaiming global prominence on the strength of world-class craft, rooted in a place and a people who know how to make something truly worth drinking.
These are shoulders on which we stand. Centuries of craftsmanship and know-how. Reimagined.
Welcome to Sailor’s Home.
WHISKEY OF IRELAND, SHAPED BY THE WORLD.
meet jack,
infamous whiskey maker
“Whiskey making is just a labour of love — a marriage of science and art.”
Jack Ó’Sé
Making great whiskey demands a lifetime's devotion – science and art not in tension, in conversation.
This is the foundation of all that Sailor's Home makes. The science of fermentation, distillation, maturation — understood deeply, applied with devotion, layered onto centuries of Irish craft know-how. And guided, always, by a singular focus on making whiskey that tastes exceptional.
There are whiskey makers, and then there’s Dr. Jack Ó'Sé. Jack has spent more than four decades immersed in the science, the craft and culture of Irish whiskey. He began making alcohol in 1979 and has never stopped learning, never stopped pushing.
Jack is one of Ireland's most respected figures in the world of spirits: distiller, industry mentor, teacher and endlessly curious explorer of flavour. He has distilled award-winning whiskeys, commissioned distilleries across continents, and worked alongside the finest maturation experts, blenders, and coopers in the world. He has gathered craft knowledge and creative influence from every corner of the globe — and brought it together to pour into every Sailor's Home expression.
“ME A LEGEND? It’s more important for me to work with people I like and respect for what they do. That’s Why some people might call me infamous rather than A LEGEND!”
“We concentrate on exploring new ways of looking at whiskey. Adding new whiskeys to the industry, but taste above all. taste is everything.”
Sailor’s Home making philosophy
Jack’s not interested in making what’s already been made. He is curious for what Irish whiskey can become. Discovering approaches because of the desire to go one step further, one step more.
Passionate about making. Building on all that has gone before. Breaking rules knowingly, to create new approaches. Constantly seeking new experiences for whiskey lovers.
Taste above all.
This making philosophy finds expression in each Sailor's Home whiskey. This is not whiskey for acclaim’s sake (awards are nice, but that’s not what Sailor’s Home is about).
This is whiskey made for the glass. For the person holding it. For the moment celebrating discovery.
NOW, DISCOVER FOR YOURSELF
“We look to explore and go beyond, so new generations of whiskey lovers can join us on this journey of discovery.”
